How to change the OS on your mobile phone?

Or maybe the question is, can you change the os? I have read alot about changing os' on palms, blackberries and pocket PCs but, can you change the OS on a mobile phone? I'm a huge fan Linux and I'd love to have a Linux based os on my phone.How to change the OS on your mobile phone?
Unfortunatley this would NOT be possibly...it's the same this as like installing windows on a Mac...your phone is only built to support the manufacturers propairity platform and that's it.

My frnd has a Motorola V360 and he is using Mac on it. Upon installing it he formated his phone and then loaded the programme now his phone has all those V360 features but he also has add ons like a scientific calculator and those nice mac themes and wallpapers.
