Dude there is no way by which you can change a Operating Systems name .
but to solve your problrem there is 1 solution.
right click on the file's icon that you wish to install and select ';properties'; in the right click menu and then select the ';compatibility'; tab check mark ';Run this program in compatibility mode for'; and choose ';windows Xp'; and click ';apply'; and finally ';ok'; . And now run your file that you need to install and it will install on a fly..

if your software was not written for 2003 then there is not much that you are going to do, save dual boot your machine and have a copy of xp on the box. The fact that your running server 2003 and not workstation 2003 would say your probably not supposed to be running gaming or other non business software on it.
